The latex restrictions do force a different kind of listening, which involve your muscles in a non-instrumental way: I failed to mention in the article that the pedals of the organ were placed at a considerable distance from where I was standing, so in order to reach them I also had to stretch my left leg, while trying to maintain balance on the right one.
It forces you to make so many different decisions as to where you will place the next chord, and how - very revealing stuff once you try it
